Fortunately, it has a naturally neutral flavor. Because of this, zucchini is one of our favorite vegetables to use as a delivery platform for explosions of savory nutrition.

Absolutely! It might seem odd at first that we selected a vegetable that has high carbs and zero fat to be the centerpiece of a recipe designed around a high-fat diet. However, zucchini’s fiber levels make this one of the vegetables that you can indulge in without worrying about being knocked out of ketosis.

 

Some low-carb advocates tend toward a “dirty keto” approach. This approach is characterized by a heavy emphasis on animal fat and protein. These are fantastic sources of nutrition, but we love to incorporate vegetables whenever and wherever we can.

Ingredients

  • Ingredients:
  • · 2 medium zucchini
  • · Salt and pepper
  • · 1 tablespoon olive oil
  • · ½ small yellow onion diced
  • · 2 cloves garlic minced
  • · 12 ounces ground beef 80% lean
  • · ½ teaspoon chili powder
  • · ¼ teaspoon ground cumin
  • · ¼ teaspoon paprika
  • · ½ cup diced tomatoes
  • · 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and slice the zucchini in half, lengthwise.
  2. Scoop out the insides of each zucchini half and dice fine, reserving for later.
  3. Place the zucchini halves in a glass baking dish and spritz with cooking spray then season with salt and pepper.
  4. Bake for 10 minutes until the zucchini just starts to soften.
  5. Meanwhile, heat the oil in a large skillet over medium heat and add the onion and diced zucchini.
  6. Cook for 5 minutes until softened, then stir in the garlic and cook 1 minute more.
  7. Add the ground beef and cook until browned, breaking it up with a wooden spoon.
  8. Drain the fat from the skillet then stir in the seasonings.
  9. Stir in the tomatoes then spoon the mixture into the zucchini halves.
  10. 10. Sprinkle with cheese and bake for 15 minutes until the cheese is melted. Serve hot.
