To make our Mediterranean-inspired chicken breasts, start by creating a pocket in the chicken breasts. To do this, simply slice into side of the chicken breast using a sharp knife. Be careful not to slice all the way through!

After creating the pockets, prepare the stuffing by first cooking the garlic and red pepper flakes the avocado oil. Next, wilt the spinach in the oil. I like to add a light sprinkle of salt to the spinach at this stage to enhance the flavor. After the spinach wilts, add it to the feta cheese, a sprinkle of dried oregano for a Mediterranean charm, salt and pepper. The tangy notes of the melted feta cheese beautifully complement the vibrant spinach, resulting in a rich and savory stuffing.

Stuff the Chicken Breasts

After making the stuffing, All you need to do is fill the pocket in each chicken breast with half of the mixture. To do this, you can use a small spoon, clean fingers, or a combination of both.

Ingredients

  • 2 boneless skinless chicken breast
  • 4 teaspoons avocado oil
  • 2 cloves garlic crushed
  • 1 pinch red pepper flakes
  • 2 cups fresh spinach leaves
  • sea salt (optional)
  • ½ cup crumbled feta cheese
  • ½ teaspoon dried oregano
  • freshly ground pepper
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper. Using a sharp knife, make a lengthwise slit in each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.

  2. In a skillet, heat one tablespoon of the avocado oil over medium heat. Add the red pepper flakes and the crushed garlic and sauté for about 1 minute until fragrant.

  3. Add the spinach leaves to the skillet and sprinkle lightly with sea salt, if desired. Cook until wilted, about 2-3 minutes. Remove from heat.

  4. In a bowl, combine the wilted spinach, crumbled feta cheese, dried oregano, ¼ teaspoon salt, and ⅕ teaspoon pepper. Mix well to combine the ingredients.

  5. Spoon the spinach and feta mixture into the pocket of each chicken breast, dividing it evenly. Use toothpicks or kitchen twine to secure the openings and prevent the stuffing from falling out. Brush the breasts lightly with the last teaspoon of avocado oil. Season the outside of the chicken breasts with salt and pepper, if desired.

  6. Place the stuffed chicken breasts in the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center. The internal temperature should reach 165°F (74°C). Once cooked, remove the toothpicks or twine from the chicken breasts and let them rest for a few minutes.
