With holiday parties in full swing, I’ve been working to bring you some options for party food. Cheeseballs make great party food, but usually they are served spread on crackers.
While there are some low-carb cracker options, like our Rosemary Parmesan Crackers and our Grain Free Sun-Dried Tomato and Olive Crackers and our Oyster Crackers, sometimes it’s nice to not need to bother with them. Making crackers is one more step and this is a busy time of year already. The easier the better!
These mini cheeseballs take away the need for crackers. They are bite-sized, so they can be served with party picks. In fact, the nutty coating makes a no mess cheeseball, so even party picks optional.
I based this recipe in my recipe for Blue Cheese, Bacon, and Scallion Cheeseball. I twisted around the flavors to make something unique. Instead of using blue cheese and scallions, I flavored these cheeseballs with cheddar cheese combined with bacon and chives. Then I finished them by rolling them in chopped pecans for a nutty, finger friendly coating.
These cheeseballs are sure to be a hit at your next party. They also make a great snack to have in the fridge for times of hunger. In fact, they are so versatile that I ate two of them this morning with my bacon for breakfast. Enjoy!
