I’ve never been a fan of making a different meal for everyone at the table. I guess I get that from my mother. My mom made meal choices simple–eat what was on the table or starve. Usually what she put on the table was pretty good, so I chose to eat.
I carried on my mother’s tradition with my own kids. I try to put a variety of things on the table, including a salad. Everyone at my house loves salad, so everyone eats at least something.
While I don’t make separate meals for picky eaters, I do try to put something on the table that everyone will enjoy. This Ultimate Cheeseburger Casserole recipe fits the bill. It appeals to kids and adults alike, as well as low-carb and not so low-carb eaters.

Loaded Hamburger Casserole
This Ultimate Bacon Cheeseburger Casserole recipe makes a simple and delicious meal. This easy casserole can be part of low-carb, keto, Atkins, diabetic, gluten-free, grain-free, and Banting diets.
Ingredients
- 3 strips bacon chopped
- 1 pound ground beef
- 5 ounces mushrooms sliced
- 1/2 cup dill pickles chopped
- 2 tablespoons white onion finely chopped
- 4 ounces cream cheese room temperature
- 2 tablespoons sour cream
- 1 teaspoon Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 teaspoon onion powder
- 1 clove garlic crushed
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper freshly ground
- 1 tablespoon red wine vinegar
- 1/3 cup heavy whipping cream
- 1 cup cheese (choose your favorite) shredded, quantity divided
Instructions
Preheat oven to 350º Fahrenheit. Spray a 9" X 9" baking pan with cooking spray. Line a plate with a paper towel
Heat a large skillet over medium-high heat. Add bacon and cook, stirring occasionally, until bacon is crisp. Transfer bacon to the paper towel lined plate using a slotted spoon.
Discard all but 1 tablespoon of bacon drippings and place skillet over medium high heat. Crumble the ground beef into the skillet. Brown the beef on all sides. Transfer to the prepared baking pan.
Discard all but 1 tablespoon of the beef drippings from the skillet. Place skillet over medium heat. Add mushrooms. Cook mushrooms, stirring occasionally, until just tender. Transfer to the prepared baking pan.
Add pickles, onions, and bacon bits to the baking pan and stir together with the ground beef and mushrooms.
In a medium mixing bowl, stir together the cream cheese and sour cream until smooth. A fork or a mixer works well for this process. Stir in the Worcestershire sauce, mustard, onion powder, garlic, salt, pepper, and the red wine vinegar. Gradually add the heavy whipping cream, a tablespoon at a time, stirring after each addition. Stir in 1/2 cup of the cheese, reserving 1/2 cup for later.
Spread the cheese sauce over the ground beef and mushroom mixture. Sprinkle the remaining 1/2 cup of cheese over top.
Bake in the preheated oven about 25 minutes or until cheese is melted and mixture is bubbly. Allow to cool 5-10 minutes before serving.

This was a real hit in my home! I made it last night and both my husband and adult son each had 2 servings. I did swap the mustard for low sugar ketchup as we don’t care for mustard on hamburgers but other than that, I made it according to directions. They really enjoyed the pickles and it added an element of surprise to the flavor of the dish. I will be making it again for my family next week when we have out of town company. I will double the ingredients and use a 9 x 13 pan. Thanks so much!
