It’s finally time to toss out the powered store-bought pink lemonade! This keto-friendly strawberry lemonade is the super easy lemonade recipe you’ve been looking for!

 

This recipe is an upgraded spin-off on traditional lemonade. Not only does this pink lemonade recipe include strawberries, but it’s also low-carb and sugar-free!

 

This refreshing beverage combines the sweetness of strawberries with the zesty punch of lemon juice. The result is the perfect fruity summer drink to cool off with on a hot day. The fresh fruity taste and vibrant colors of this lemonade will make this drink a quick family favorite!

This strawberry lemonade recipe is so simple that this recipe only includes 4 ingredients, one of which is water!

 

This easy sugar-free lemonade is unbelievably bright– both in color and flavor. The pictures might seem to be over-saturated but this lemonade really is just that bright in person. No artificial colorings neccessary!

The Inspiration

We think a good lemonade is a summer staple. Especially if enduring hot summers in the south. It’s the ultimate way to cool off after a hot day outside. Plus it only takes a few minutes to pull together a batch of homemade lemonade.

 

Although we’ve had this food blog for several years now, we still have never posted a simple lemonade recipe. We have loads of lemon recipes, like our Keto Easy Lemon Chia Pudding Recipe and our Low-Carb Lemon Poppy Seed Muffins Recipe, but not a lemonade recipe. Of course, us being us, we couldn’t simply post just a basic lemonade recipe, so we decided to add a fun little twist.

 

Not only do the strawberries add a pleasant, sweet flavor to this recipe, they also give it a phenomenal color that makes this drink really special. To spice up this drink even more, you could spike it with rum to create a cocktail!

 

This recipe was inspired by this strawberry lemonade recipe from tastesbetterfromscratch. Then I adjusted the recipe to make it suitable for the keto-diet by omitting any added sugars as well as adjusting the proportions.

Is sugar-free strawberry lemonade good for you?

Yes, if it’s homemade! Many store-bought powdered sugar-free lemonades contain a range of artificial flavors, colors, sweeteners, etc. without any nutritional benefits. Thankfully, homemade strawberry lemonade has a lot of benefits and is super easy to make.

 

While this drink might be only 17 calories per serving, it still carries plenty of nutritional benefits. The lemon juice contains vitamin C, calcium, and potassium.

 

In addition, strawberries are very rich in antioxidants and contain vitamin C and manganese.  

How do you make strawberry lemonade from scratch?

Making homemade strawberry lemonade is actually so simple! To make this lemonade from scratch, you first have to prepare the two main ingredients- the strawberries and the lemons.

 

I highly recommend using freshly squeezed lemon juice rather that the store-bought juice. While it will take a little more time to squeeze the lemons by hand, the final taste will be worth it!

 

When buying lemons at the store, I recommend slightly overestimating the amount of lemons that you will need. If you have an extra lemon, you can cut it into wedges to garnish the glasses. If you do end up with less than 1 1/2 cups of lemon juice, you can just slightly decrease all of the ingredients in the recipe proportionately.

Once you’ve juiced the lemons, it’s time to puree the strawberries. Using a food processor or blender, blend the fresh strawberries until they reach a puree consistency.

 

It’s very important to ensure that this puree is as smooth as possible. If this mixture is not completely smooth it may be difficult to strain later on. Then add a cup of water to the puree and blend again. This water will thin out the puree so that it’s easier to strain. 

 

In the final serving pitcher, add the water and sweetener and stir well. I like to mix the two together before adding any other ingredients to help the sweetener dissolve into the water. Finally, strain the strawberry puree and lemon juice into the pitcher. This process removes any seeds or pulp. Stir well and then serve! Garnish with a lemon wedge or strawberry slice as desired.

 

How to store Sugar-Free Strawberry Lemonade

One of my favorite things about this recipe is that I can enjoy it throughout the week as a nice convenient afternoon treat.

 

This keto strawberry lemonade can be stored in a pitcher and covered with plastic wrap or any other tool to seal the top of the pitcher. Finally, simply place the lemonade pitcher in the fridge until serving. 

 

When you’re ready to serve it, be sure to give it a quick stir to distribute any strawberry puree that might have settled.

Can you Freeze Sugar-Free Strawberry Lemonade?

Yes! Although I think this lemonade is best served fresh, it can easily be stored in the freezer to be enjoyed later.

 

When freezing this recipe, I would recommend freezing only the lemon juice and strawberry puree rather the entire completed recipe. Not only will it save space in your freezer but it will give it a fresher taste. It will also take less time to defrost.

 

Also, if this recipe makes more lemonade than you need at a time, you can split the recipe in half. Then freeze half of the lemon juice and strawberry puree. 

 

To freeze this recipe, first puree the strawberries as directed and add in the additional cup of water and blend. Then strain the strawberry puree and lemon juice into a large/gallon sized bag or other freezer-safe container. Make sure the bag/container is completely sealed and then store in the freeze until use.

 

To defrost the puree and lemon juice mixture. Run the bag/container under warm water until it is entirely defrosted. Next, transfer the defrosted puree to a large pitcher and stir in the sweetener and water until thoroughly combined.

Another exciting way to preserve this Keto strawberry lemonade is by turning it into sugar-free strawberry lemonade popsicles. In order to do this, first complete the entire recipe as written. You may want to add a little additional sweetener as it may taste less sweet when frozen. Finally, pour the mixture into popsicle molds and freeze until solid. Now you have delicious and refreshing low-carb strawberry lemonade popsicles.

Ingredients

  • 8 oz fresh strawberries (about 2 cups)
  • 2 1/2 tbsp granulated stevia erythritol blend sweetener
  • 7 cups water + 1 cup to add in the strawberry puree
  • 1 1/2 cups freshly-squeezed lemon juice (about 7-10 medium/large lemons)

Instructions

  1. Using a food processer, blend the strawberries until they reach a smooth puree-like consistency. Next, add 1 cup of water and blend until combined.

  2. In a large serving pitcher combine 7 cups of water and sweetener. Stir until the sweetener begins to dissolve.

  3. Next, using a fine strainer or sieve, strain the strawberry juice directly into the pitcher with the water and sweetener. Stir to combine. Next strain in the lemon juice and stir well to ensure that any remaining sweetener is dissolved. Taste and adjust sweetness or water quanitity as desired.

Recipe Notes

This lemonade is only lightly sweetened to allow flexibility on level of sweetness. Once finished with the recipe, taste and adjust as needed. More water can be added to dilute if the lemonade is too strong.
