Italian cream sodas have not been on my mind in the least until I saw this recipe for Blueberry Italian Cream Sodas on Pinterest a few weeks ago. Now I can’t seem to get them off my mind!
It’s no wonder! Who wouldn’t want one of Patricia’s gorgeous soda creations? While the recipe contains sugar, which my followers don’t eat, this girl has some things right!
I love that Patricia uses real fruit and makes the syrup for the sodas from scratch. So often, Italian cream sodas are made with syrups that contain loads of food coloring, artificial flavors, high fructose corn syrups and other nasties.
One thing I do differently than Patricia is that I don’t strain out the berries at the end. Instead, I put them in the blender with water and liquify them before making the syrup. I do this so that we don’t lose out on any of the fiber and antioxidants in the berries. Of course, with my method, there will be a few tiny bits of strawberry and some strawberry seeds left. I actually like tiny pieces of strawberries in the soda, but if you prefer, you could strain them out at the end.
I use cream for these sodas, because many of my followers prefer to switch carb macros for fat macros. If you prefer, you could use half and half, or half cream and half almond milk. This will still give a creamy, decadent texture to the sodas, but not add as much fat.

Low-Carb Strawberry Italian Cream Soda Recipe
This Low-Carb Strawberry Italian Cream Soda Recipe makes a delicious creamy treat. These sodas can be part of a low-carb, keto, Atkins, diabetic, sugar-free, grain-free, LCHF, or Banting diet.
Ingredients
- 1 cup water
- 4 ounces strawberries
- 1/2 cup granulated stevia/erythritol blend (Pyure)
- 24 ounces sparkling water
- 8 ounces heavy whipping cream
Instructions
In a blender, blend water and strawberries together until strawberries are liquified. Pour into a 1 1/2 to 2 quart saucepan.
Add the stevia/erythritol blend to the strawberries and bring the mixture to a simmer over medium high heat, stirring frequently. Turn heat to low and simmer for about 5 minutes or until mixture thickens slightly.
Allow mixture to cool. Fill 4 16-ounce glasses halfway full of ice.
In each glass, pour 2 ounces of the strawberry syrup over the ice.
Pour 6 ounces of sparking water over the syrup.
Finally add 2 ounces of cream on top. Garnish with whipped cream and/or strawberries if desired.

Yum! Can up use Lakanto monk fruit in this recipe? Do you know the substitution equivalency?
That should work fine. You may need to use more as Lankanto is less sweet than Pyure.

This was fabulous! It really hit the spot on the first hot day of the year. I used coconut cream and halved the amount of sweetener. It’s definitely a keeper.
I will also try it with cherries in the future.
