The Popsicles
These popsicles boast a creamy texture like an ice cream bar. This recipe uses real whipped cream infused with a touch of vanilla and real puréed strawberries. These popsicles are quick to make and a dream to eat.
The Inspiration
It has been one hot summer here in the Carolinas! It’s the kind of heat that makes me dream of swimming in the North Sea and fantasize about lying in the snow making snow angels. Since neither of those options are available to me, I have to settle for the next best thing–frozen treats from the freezer!
Ice cream is often at the top of my list of favorite frozen concoctions. This summer, in particular, I’ve had a thing for strawberry ice cream. While I’ve been craving strawberry ice cream, I really wanted to make a recipe that doesn’t require a lot of waiting around for the ice cream to turn.
My solution was to create this popsicle recipe. I based this recipe loosely on Harper’s Low-Carb Root Beer Float Popsicle recipe. This recipe is made in the blender, however, so it’s super fast and easy to make–Just blend everything and pour into the mold. The hardest part of the recipe is waiting for them to freeze.
Tips and Tricks
There are different types of popsicle molds and the ones I use make 10 3-ounce treats. This recipe fills this mold perfectly. Other molds will work just as well, but you may need to adjust the amounts to fill the molds perfectly. Instead of adjusting the recipe, I recommend just pouring any extra in a freezer-safe container for some no-churn ice cream!
In fact, if you don’t have any popsicle molds at all, you can simply pour the popsicle mixture into freezer-safe single serving cups, cover and freeze. You’ll need to allow these to warm up a bit, about 10 -15 minutes before eating, as their texture harder when completely frozen than churned ice cream.
One thing I love about popsicles and freezing ice cream in single serve containers is that there is built in portion control. With regular ice cream, it’s tempting to take “just one more little scoop”. Popsicles and single-serve containers predetermined the serving size for you.
One last tip I have is about removing the popsicles from the mold. To easily remove the popsicles from the mold, simply run hot tap water over the mold to help them release. Be sure to get both sides.

Low-Carb Strawberry Cream Popsicles
Our Low-Carb Strawberry Cream Popsicles are loaded with fruity flavor. These creamy popsicles are low-carb, so they can be part of a low-carb, keto, Atkins, diabetic, gluten-free, or Banting diet.
Ingredients
- 1 1/4 cup heavy whipping cream
- 1/4 cup stevia/erythritol blend (Pyure)
- 1/2 cup original unsweetened almond milk
- 1 teaspoon vanilla extract (sugar free)
- 2 cups strawberries hulled (Fresh or Frozen work equally well)
Instructions
Place heavy whipping cream in a blender. Blend until soft peaks form. (Don't over-beat or you will make butter.)
Add the stevia/erythritol blend, almond milk, vanilla extract, and strawberries.
Blend until strawberries are completely blended.
Pour into popsicle molds.
Cover mold, insert sticks, then freeze until solid (between 3-5 hours).
To remove popsicles easily from the mold, run hot water over the outside of the mold to loosen, then pull the popsicle out.

I have no almond milk, is coconut milk ok? Also, I only have granulated erythritol (Natvia), would I use the same amount?

Coconut milk will absolutely work. You will probably need to use more erythritol. The good news is that you can taste and add more if you need it. I suspect you will need to at least double the amount for the same sweetness level. The popsicles may be slightly harder with more erythritol, but I think they will still be pretty tasty. Let me know how it goes!

Yes, you will probably want to increase the amount since that sweetener is not as sweet as Pyure blend.
