These green pepper boats are stuffed full of Italian sausage, drenched with pizza sauce, and blanketed in gooey cheese. A few pepperoni slices top them off. These stuffed peppers have all of the things that make a pizza special, but without the crust.
The Inspiration:
This recipe for stuffed peppers began at the farmer’s market last Saturday. There were loads of gorgeous peppers in glorious shades of red, yellow, orange, and even purple. Of course, there were piles of green ones as well.
Part of the thing I love about the farmer’s market is chatting with the farmers. It’s always fun to meet new people and I love discussing how they make their crafts, grow their vegetables and raise their meat.
Last Saturday, I had a great discussion with one the pepper farmers about stuffed peppers . I went home with some beautiful green peppers, Italian sausage, and a mind bursting with ideas. I couldn’t wait to work on this recipe for stuffed peppers with a pizza twist.

Low-Carb Easy Pizza Stuffed Peppers
No crust needed for these Low-Carb Easy Pizza Stuffed Peppers! This recipe delivers delicious pizza flavor without adding the carbs of a crust. These stuffed peppers can be part of a low-carb, ketogenic, Atkins, diabetic, gluten-free, grain-free, or Banting diet.
Ingredients
- 4 large bell peppers Cut in half lengthwise, seeds and ribs removed
- 1 pound ground Italian sausage (sweet or hot)
- 3/4 cup pizza sauce (low-carb)
- 8 slices provolone or mozzarella cheese
- 16 slices pepperoni
Instructions
Preheat oven to 375º Fahrenheit. Arrange peppers on a baking sheet. When oven is preheated, bake peppers for 10 minutes. After removing them from the oven leave it turned on for used later.
While peppers are baking, heat a skillet over medium-high heat. When skillet is hot, add the ground sausage. Cook sausage until brown. Remove skillet from heat. Drain out any excess grease.
Stir the pizza sauce into the sausage.
Divide sausage mixture among the pepper halves.
Cover each pepper half with a slice of cheese and two slices of pepperoni.
Bake in preheated oven for 14-17 minutes, or until cheese is melted and slightly browned on top.
How fun are these! Stuffed peppers that my kids will actually eat – delish!
