Types of asparagus
While asparagus is traditionally green, stores now carry purple and white asparagus.
White asparagus is not a different variety than its green counterpart. Instead, it is grown differently. As the shoots of the vegetable come out of the ground, the farmer covers them with soil. This layer of soil prevents the sun from reaching the shoots and prevents photosynthesis from happening and maintaining the blanched color.
White asparagus is popular in Europe and western Asia, but I increasingly see it in US grocery stores. The process of blanching the asparagus is thought to make the asparagus less bitter and more tender. The white color provides a unique look for the Spring table. Source
Purple asparagus is a different variety than green and white asparagus. This unique vegetable was developed in Italy. Further breeding in the US and New Zealand has led to the “Pacific Purple” variety. Source
While the purple hue adds an elegant touch to the table, this varies has higher sugar levels and lower fiber levels than other types of the vegetable.
What are the benefits of asparagus
Asparagus may be made of 93% water, but it’s loaded with vitamins, antioxidants, trace minerals and fiber.
According to the USDA, per 100 grams of the vegetable, there are 4 grams total carbs and 2.1 grams fiber. This means that there are less than 2 net grams of carbohydrates per serving making asparagus an ideal vegetable for low-carb and ketogenic diets.
How to prepare asparagus before cooking
To prepare asparagus for cooking, first wash it in cold water, then gently dry the spears by rolling them over a kitchen towel.
The top part of the asparagus is the most tender part of the spear and they get tougher down the stalk and are toughest at the cut end.
To remove the tough portion of the spear, simply snap off the bottom using your hands. Discard or compost the fibrous ends.
If you have very thick spears, you may want to peel the outer skin off with a vegetable peeler to make them even more tender.
