My inspiration for this reader actually came from a reader comment on my recipe for peanut butter pie. This reader wanted to know the nutritional for the peanut butter pie filling.
Obviously, this person was planning to eat the filling with a spoon and not bother with the rest of the pie. I liked how she was thinking!
I decided I wanted this mousse to be just a bit fluffier than the peanut butter pie filling, so I added some extra whipped cream. This makes it a perfect peanut butter cloud.
Tips and tricks
For the most fluffy texture, serve this Keto-Friendly Low-Carb Peanut Butter Mousse immediately after making. It’s more like a peanut butter whip and super creamy before refrigerating.
Refrigerating it for several hours will give it a more mousse-like consistency.
To make a peanut butter no-churn ice cream, just spoon the mousse into individual freezer-safe containers and freeze. It’s important to use serving sized containers because it will be hard to scoop out after it’s frozen.
After freezing, let it sit at room temperature for about 10-15 minutes to let it soften, then it can be eaten like a no-churn ice-cream.

Ingredients
For the peanut butter mixture:
- 1/2 cup granulated stevia/erythritol blend (Pyure)(or 1 cup powdered Swerve)
- 2 tablespoons heavy whipping cream
- 2 teaspoons vanilla extract
- 8 ounces cream cheese (room temperature)
- 3/4 cup peanut butter
For the whipping cream:
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
Instructions
For the peanut butter mixture:
(Skip if using powdered Swerve). Process Pyure in a food processor until it has a powdery consistency. Transfer to a large bowl.
Add 2 tablespoons heavy whipping cream and 2 teaspoons vanilla extract to the sweetener. Blend together using a mixer.
Add the cream cheese and the peanut butter to the sweetener mixture.
Blend on low speed until combined, then beat on high speed until mixture becomes fluffy. Clean beaters before continuing to the next step.
For the whipping cream:
Place one cup of the heavy whipping cream in a separate medium mixing bowl. Beat on high speed using a hand mixer until soft peaks form. Add vanilla extract and beat until stiff peaks form.
To combine:
Gently fold about 1/3 of the whipped cream into the peanut butter mixture to lighten. Fold in the rest of the whipped cream.
Spoon into eight serving dishes and garnish as desired. I sprinkled a bit of dark chocolate on top in the photo.

If you don’t like things super sweet, I would start with using just a little more than I do of Pyure. I would then taste it to see if I need to add more. The problem with swerve is that you need to use more to get the same sweetness, but the more erythritol (main ingredient in Swerve) you add, the less it will dissolve. Also, the more erythritol, the more likely that weird cooling effect is likely to come out. In conclusion, I would increase the amount as little as possible to get a sweetness level I like.

I’m a little confused. I entered the recipe into my app and it shows the carbs as 23g and your nutrition facts show 7g? Am I doing something wrong? The sweetener alone works out to 12g carbs per serving.
Erythritol is not metabolized by the body, so I do not count it. It goes in and is absorbed by the intestines, then comes out in the urine unchanged.

Thanks so much! The only thing in this recipe that uses a food processor is turning the granulated sweetener into powder. You could just start with a powdered sweetener. Just be careful to use the correct amount. The sweetener I use is twice as sweet as sugar, so if the sweetener you use is the same sweetness as sugar, you will need to use twice the amount in the recipe. Good luck!

Could you use peanut butter flour instead of actually peanut butter??
I’m not very familiar with using peanut butter flour, so I’m not really sure.
I tried this recipe with pyure and monk fruit. It was way way too sweet. It was more like a very rich frosting. . I also used fat free Greek yogurt instead of cream cheese which I doubled because it was so sweet. I also used 3 oz of peanut butter and 3 T powdered almond butter to cut down on the fat since I am on weight watchers.
I don’t think I will make this again.

Sorry it didn’t work out for you. I suspect that you made a mistake when converting the amount of sweetener. Did you use the erythritol/stevia Pyure blend? Also, why did you add in monk fruit? I get very frustrated with sweeteners in recipes because everyone prefers something different and the sweeteners are not equal in sweetness or in how they perform in recipes. It’s impossible to try them all with each recipe. I seriously have nightmares about sweeteners.

My thoughts exactly. Rattle off the things you substituted then complain its too sweet and you wouldn’t make it again. Try following the recipe!!!! I suspect it will then turn out great!

Back from NY and my son and wife loved the mousse. I froze a portion and they had delicious peanut butter mousse ice cream as well. Now I know what to do with extra servings! This is so good that my husband and I could easily eat the entire recipe in one sitting! That’ why freezing it makes sense for us.

I’m not sure which brand I used when I made this. I usually look for one that is made with palm oil so it stays together. I also try to find one with the lowest amount of sugar.It can be a challenge to avoid sugar completely.
