This Pizza Stuffed Meatloaf satisfies a pizza craving without the carbs and grains. This recipe is kid-friendly, super simple and fun to make. Just leave out the cheese to make this recipe Paleo-friendly.

I love being on a low-carb diet–I feel better, look better and have more energy. Sometimes, however, it can be tough to stick to. For example, a stroll by a pizza shop with mouthwatering aromas of oregano, basil and pepperoni escaping can sometimes makes me think about cheating–at least for a split second. Instead of going for that carb-laden slice, I think about what I love about the craved food and come up with a low carb alternative.
What do I love about pizza? Melted cheese, spicy pepperoni, tasty hamburger, Italian herbs, and tomato sauce. The crust? I could do without it. So I put everything I loved in this recipe and left out the crust. The result: a meatloaf stuffed with gooey pizza-topping goodness!

Step-By-Step Instructions
1. ) Preheat oven to 375 Fahrenheit.
2.) Place ground beef on a sheet of parchment paper.
3.) Using clean hands, shape the meat to make a 9 inch by 7 inch rectangle.
4.) Sprinkle meat with salt and pepper.
5.) Using a spoon, spread 2 Tablespoons pizza sauce over the meat, leaving the outer 1/2 inch bare.
6.) On 1/2 of the hamburger, arrange the basil leaves and pepperoni over the sauce, leaving the outer 1/2 inch bare.
7.) Sprinkle 2 Tablespoon each of the parmesan and mozzarella cheeses. over the pepperoni and basil leaves.
8.) Carefully fold the half of the hamburger with only the sauce over the half with the filling.
9.) Pinch the edges to seal.
10.) Carefully place loaf on a broiler pan. A large spatula helps with this. Parchment may be discarded.
11.) Sprinkle the top with salt and pepper.
12.) Poke the top with a knife in a few places for steam to escape.
13.) Spread remaining 2 Tablespoons sauce on top of the loaf.
14.) Arrange remaining pepperoni slices over the sauce.
15.) Sprinkle remaining 2 Tablespoons each of parmesan and mozzarella over the loaf.
16.) Sprinkle a pinch of oregano and a sprinkle of freshly ground pepper on the top if desired
17.) Bake in pre-heated oven for 30 minutes or until done.

- 2 ounces sliced uncured pepperoni divided

- 4 Tablespoons grated mozzarella cheese divided
