Low-Carb Sweet and Sour Cucumber Salad
Ingredients
For the dressing
- 2 Tablespoons olive oil
- 3 Tablespoons raw apple cider vinegar
- 1 teaspoon granulated stevia/erythritol blend Substitute honey for Paleo
- 1/2 teaspoon dried dill
- 1 clove garlic crushed
- 1/8 teaspoon red pepper flakes
- 1/4 teaspoon celery salt
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
For the salad
- 3 medium cucumbers or 1 large "hothouse" cucumber spiralized, coarsely grated, or thinly sliced.
- 3 baby carrots spiralized, coarsely grated or thinly sliced
- 3 green onions thinly sliced
Instructions
For the dressing
- In a small bowl, whisk all dressing ingredients together.
For the salad
- Toss cucumbers, carrots and green onions together in a medium bowl.
- Whisk the dressing one last time before pouring over salad ingredients. Toss lightly to combine vegetables and dressing.
- Garnish with additional green onions if desired.
