Ingredients

For the dressing

For the salad

  • 3 medium cucumbers or 1 large "hothouse" cucumber spiralized, coarsely grated, or thinly sliced.
  • 3 baby carrots spiralized, coarsely grated or thinly sliced
  • 3 green onions thinly sliced

Instructions

For the dressing

  1. In a small bowl, whisk all dressing ingredients together.

For the salad

  1. Toss cucumbers, carrots and green onions together in a medium bowl.
  2. Whisk the dressing one last time before pouring over salad ingredients. Toss lightly to combine vegetables and dressing.
  3. Garnish with additional green onions if desired.
