Our Curry Roasted Cauliflower Recipe makes an easy side dish with an exotic flair. This healthy side dish can be part of a low-carb, keto, Atkins, gluten-free, or Paleo diet.
Preheat oven to 425º Fahrenheit. Line 2 large baking sheets with parchment paper.
Place the cauliflower slices and florets on the prepared baking sheets, keeping the pieces from touching.
In a small bowl, whisk together the avocado oil, curry powder, garam masala, sea salt, and red pepper flakes.
Brush the oil mixture onto the cauliflower steaks and florets.
Bake the cauliflower for 25-30 minutes, turning once. Cauliflower should be tender and caramelized and brown in places. Taste and add more sea salt, if desired.
Sprinkle with cilantro just before serving.
