This Low-Carb Strawberry Italian Cream Soda Recipe makes a delicious creamy treat. These sodas can be part of a low-carb, keto, Atkins, diabetic, sugar-free, grain-free, LCHF, or Banting diet.
In a blender, blend water and strawberries together until strawberries are liquified. Pour into a 1 1/2 to 2 quart saucepan.
Add the stevia/erythritol blend to the strawberries and bring the mixture to a simmer over medium high heat, stirring frequently. Turn heat to low and simmer for about 5 minutes or until mixture thickens slightly.
Allow mixture to cool. Fill 4 16-ounce glasses halfway full of ice.
In each glass, pour 2 ounces of the strawberry syrup over the ice.
Pour 6 ounces of sparking water over the syrup.
Finally add 2 ounces of cream on top. Garnish with whipped cream and/or strawberries if desired.
