Paleo Curried Meatballs

These Paleo curried meatballs will please the whole family! They are low-carb, gluten-free, dairy-free and grain free. What a delicious, nutrition-packed weekday meal!

Ingredients

For the meatballs

  • 1 pound grass-fed organic ground beef
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon onion powder
  • 1 clove garlic crushed
  • 1 teaspoon curry powder
  • 1/4 teaspoon Garam Masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon sea salt
  • dash of cayenne pepper
  • 1 tablespoon coconut oil

For the curry sauce

  • 1 medium onion finely chopped
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1 clove garlic crushed
  • 3/4 cup coconut cream
  • dash of chili pepper flakes
  • 2 cups fresh or frozen spinach
  • 1/4 teaspoon or to taste freshly ground pepper
  • 1/2 teaspoon or to taste sea salt
  • 1 green onion thinly sliced for garnish, optional

Instructions

For the meatballs

  1. Place all meatball ingredients except for the coconut oil in a medium bowl.
  2. Mix together thoroughly using a spoon or your hands.
  3. Shape into 1.5 inch balls using your hands.
  4. Heat a large skillet over medium-low heat.
  5. Add coconut oil.
  6. When coconut oil is hot, add meatballs.
  7. When meatballs are browned on the first side, carefully turn them.
  8. Repeat, until all sides of the meatballs are browned.

For the sauce

  1. After the outside of the meatballs are browned add onions to the pan.
  2. Turn heat to low.
  3. Cook meatballs and onions in the pan until onions are translucent and beginning to brown.
  4. Add curry powder and turmeric to the pan and stir to toast spices--about one minute.
  5. Add garlic and stir.
  6. Cook for one minute.
  7. Add coconut cream and increase heat to medium low.
  8. Bring to a simmer.
  9. Add spinach and return to a simmer.
  10. Turn to low and allow to simmer.
  11. This dish is done when the sauce thickens slightly and meatballs are cooked through.
  12. Add salt, pepper and chili pepper flakes.
  13. Garnish with green onions before serving. Enjoy!
