Preheat oven to 375º Fahrenheit. Set out a cooling rack. Line a baking sheet with parchment paper and place prepared crust on top.
Spread the ricotta cheese over the flatbread going almost to the edge and set aside.
Heat a large skillet over medium heat. Add butter. When butter has melted and stops bubbling add garlic.
Cook garlic for one minute. Stir in white wine vinegar. Simmer vinegar until the mixture is almost syrupy. Stir in spinach. Sprinkle with salt and pepper. Cook spinach, stirring constantly, just until it wilts--1-3 minutes. Remove from heat.
Spread the prepared spinach over the ricotta cheese. Sprinkle the feta cheese crumbles and the chip pepper flakes over top.
Bake for 8-10 minutes or until heated through. If the edges of the flatbread brown too quickly, cover them with foil.
Remove from oven and slide the pizza off the parchment paper and onto the cooling rack.
