Low-Carb Root Beer Float Popsicles

Delicious creamy low-carb, gluten-free popsicles with flavors of root beer and vanilla.

  1. Pour cream into a medium mixing bowl. Using an electric mixer, whip until stiff peaks form.
  2. Add sweetener, vanilla extract and root beer flavoring and beat until incorporated.
  3. Add milk and blend to combine. Mixture will thin.
  4. Whip mixture until it is frothy and thickens again slightly.
  5. Pour into mold. Add popsicle sticks and freeze for several hours before enjoying.
  6. To release popsicles, pour hot water over the outside of the mold.

Recipe Notes

If you are using a different popsicle mold, you may need to adjust the quantities slightly.
