Our Oven Roasted Taco Cauliflower is sure to please even picky children and husbands. Do you have family members that cringe at the mention of cauliflower? Don’t let that stop you from making this recipe. Instead, just rename it! At our house, we call these spicy nugget,s taco trees, because the cauliflower florets resemble small trees. Sometimes, for kids, it’s all in a name.
In this recipe, cauliflower florets are coated with a delicious mixture of olive oil and taco seasoning, then oven-roasted to bring out that sweet caramelized flavor. A few sliced green onions add even more goodness and color. The result makes a side dish that everyone will love.
These veggies can be served as a side dish, but could also be put in a lettuce wrap to make a satisfying light meal. They would also work as an appetizer or a snack to nibble on during a game or movie. I love to dip them in guacamole or sour cream (only if you eat dairy). Enjoy!

Oven-Roasted Taco Cauliflower
Ingredients
- 3 tablespoons olive oil or melted coconut oil
- 1 tablespoon taco seasoning (more if desired)*
- 1/4 teaspoon sea salt
- 8 ounces raw cauliflower cut or broken up into small florets
- 1 green onion sliced, white and green parts separated
Instructions
Preheat oven to 375º Fahrenheit.
In a medium bowl, stir together the olive oil and the taco seasoning. Add the cauliflower and the white parts of the green onion and stir to coat.
Spread vegetables on a baking tray. Be sure the pieces do not touch each other. Sprinkle with salt.
Bake in the preheated oven for 15 minutes, then turn. Return to oven for an addition 10-15 minutes, or until they are golden and the edges are caramelized.
Sprinkle with the green parts of the green onions before serving.
Recipe Notes
*I have used up to 2 tablespoons with good result. The amount depends on how flavorful you want it. Purchased taco seasoning may also be used, but watch out for hidden ingredients. The flavor will vary depending on what seasoning you use.
