The recipe for keto avocado toast

If you’re craving avocado toast, this recipe is for you! This recipe was inspired by my son’s avocado toast that he makes frequently. It looks tasty, but, due to the high carb nature of the bread, I haven’t been able to try it. That’s why I decided to create a low-carb, keto-friendly avocado toast alternative. 

 

I use the term “toast” a bit loosely. The base for this recipe is really more of a flatbread, which I consider a bit of an upgrade to toast. 

 

How to make Keto Avocado Toast

This culinary concoction starts with a base with just two ingredient’s–three if you add salt. Just melt the cheese into the almond flour until it turns into a dough. Next, roll it out and bake it. 

 

Once the base has baked, the real creativity begins! We rubbed the flatbread with garlic, added slices of avocado, a drizzle of olive oil, some red pepper flakes, sliced radish, cilantro, and sliced green onions.

 

Feel free to alter these topping to make a version that you love.

 

Avocado Toast Toppings

While I love the combination of toppings I’ve used in this recipe, you can top your avocado toast with a variety of other options. Some ideas include:

  • a poached or fried egg
  • sprouted seeds
  • minced jalapeño pepper
  • everything but the bagel seasoning
  • smoked salmon
  • capers
  • thinly sliced red onion
  • bacon bits
  • onion slices
  • sesame seeds
  • cheese
  • tomatoes
  • basil (or other fresh herbs)
  • a drizzle of balsamic vinegar (this will add a carb or two)

Do you need to mash the avocado for avocado toast?

To mash or not to mash–That is the question. It depends on how you like it! I didn’t mash it when I photographed this one. I think the avocado slices are prettier if left intact. 

 

When looks don’t matter as much, you can mash to your hearts content! To mash the avocado, put it in a small bowl and use a fork. Mash it a little or a lot–whatever texture you prefer. Adding a few drops of lime juice will slow the browning of the avocado. This browning is due to a natural process called oxidation. 

 

Can you make keto avocado toast ahead?

You can make the “toast” for the avocado toast 2-3 days in advance. Just store it in an airtight container in the fridge. However, you won’t want to assemble it until you’re ready to eat it. Avocado doesn’t keep well after it has been cut open. As mentioned above, it will oxidize and turn brown. 

 

How to find the perfect avocado

The quality of the avocado you use in this recipe makes a huge difference in how good your avocado toast is. You really want to use a perfectly ripe avocado. 

 

To find avocado perfection, first look at the color of the skin of the avocado. An avocado with a medium green skin is not not yet ripe enough to use.

 

However, If the skin is black and dull, it’s probably over-ripe. Instead, look for an avocado with variations of purple along with a very dark, almost black, shade of green. 

 

After you’ve found an avocado that is about the right color, squeeze your thumb lightly into the side of the fruit. If it gives just a little, it’s perfectly ripe. On the other hand, it gives too much, it’s over-ripe. If it doesn’t give at all, it needs some time to ripen. Generally, I perform this step in my kitchen when deciding between two avocados. 

 

How to ripen an avocado quickly

If you can’t find the perfect avocado, you can create it! All too often, the produce department has loads of unripe avocados, and not a single ripe one.

 

While you can’t do much about this if you’re searching for an avocado to use the same day, you can ripen avocados in just a day or two. To ripen an avocado quickly, simply put it in a paper bag and fold the top of the bag down. After the bag is folded shut, leave it on the counter overnight. It will probably be ripe the next day (although it might take two nights).

 

How to prevent avocados from getting over ripe

While finding a ripe avocado can be a problem, the opposite, preventing the ripe avocado from going bad, can be a struggle as well. Often this happens when you buy multiple avocados at once.  When you buy many avocados at the same stage of ripeness, they frequently enter the perfect stage of ripeness at the same time.

 

If I have many avocados ripen at the same time, I try to use up one or two, and I put the rest of the ripe avocados in the refrigerator. This slows the ripening process and keeps them at that perfect stage for two to three days longer.

How to store the unused half of an avocado

One problem with making avocado toast is that we often don’t need the second half of the avocado. Here are a few tips to store it so that it stays good for another day or two. 

 

First of all, use the side of the avocado without the pit to make your avocado toast. Leave the pit in the half that you want to store. The pit protects the center of the avocado from air. It is the oxygen in the air that causes the avocado to turn brown.

 

In addition to keeping the pit in the avocado, leave the skin on. This protects the outside of the avocado half.

 

While keeping the pit and skin intact protects some parts of the avocado, there is a portion that is exposed. To help mitigate oxidation in the exposed avocado, simply rub a few drops of lime or lemon juice on the exposed fruit. Citrus contains anti-oxidants which protect against oxidation. 

 

Next, cover the avocado tightly with an air tight material. Plastic wrap works well for this, but I prefer a reusable silicone cover made for this purpose. Another environmentally friendly option is a beeswax coated wrap. The cover keeps the air out. Without oxygen, oxidation cannot occur.

Ingredients

  • ¼ cup super fine almond flour
  • ½ cup mozzarella cheese finely shredded
  • pinch sea salt
  • 1 clove garlic cut in half
  • ½ avocado
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon olive oil extra virgin
  • teaspoon red pepper flakes
  • 1 small radish thinly sliced
  • 2 teaspoons green onion thinly sliced
  • 1 teaspoon cilantro chopped
  • sea salt (optional)
  • freshly ground pepper

Instructions

  1. Place rack in the center of the oven. Preheat oven to 400º Fahrenheit. Have two sheets of parchment about 10" long, a rolling pin and a baking sheet ready.

  2. In a large saucepan, mix together the almond flour, mozzarella cheese, and sea salt. Place mixture over low heat. Heat, stirring constantly, until cheese melts and the mixture becomes dough-like.

  3. Place dough on one of the pieces of parchment. Shape into a rectangle. Cover with the other sheet of parchment.

  4. Roll dough out into a 5" by 8" rectangle. Remove the top piece of parchment and slide the dough onto a sheet pan keeping the bottom parchment underneath. Poke holes in the dough using a fork.

  5. Place on center rack of the preheated oven. Bake for 5-6 minutes or until the top starts to turn golden, watching carefully to prevent burning. Gently turn the flatbread and put back on the sheet. Bake for an additional 3-5 minutes. Allow to cool on a cooling rack for 3-5 minutes.

  6. Rub the top of the toast with the cut side of the clove of garlic.

  7. Arrange the slices of avocado over the bread. Sprinkle the lime juice evenly over the avocado slices. Drizzle the olive oil over top.

  8. Sprinkle on the red pepper flakes. Arrange the sliced radishes over the avocado. Sprinkle the green onion and cilantro over top. Sprinkle with sea salt and freshly ground pepper. Slice into 4 pieces, if desired. Serving size is 2 of the 4 pieces.
