The Recipe

This Grilled Rosemary Lemon Chicken recipe starts by marinating the chicken pieces in a lemon juice, avocado oil,  garlic and rosemary. This allows the flavors to soak deep in the meat so you get that rosemary, lemon, and garlic goodness in every bite.

I used skin-on thighs and drumsticks for this recipe. These work well for those on a keto diet because they have a richer fat content. I love them because they have a deeper flavor and are juicier than the breast pieces. One of my favorite things about the thighs and legs is that they are inexpensive. More flavor for less money–Who doesn’t want that?

Of course, there are those people out there who are will only eat chicken breasts. This recipe will work for those too. Skin-on breasts will turn out juicier than skinless breasts, but the skinless will still be tasty.

The Inspiration

This recipe was inspired by the need to feed lots of people at once. Summer is here and we have had several batches of relatives make their yearly trek to spend some time with us. I have found grilling to be a super simple way to feed everyone and still be able to spend time enjoying their company.

During one of these visits, one evening I decided to pop some hot dogs on the grill for the kids, but thought the adults might like some marinated chicken for a more grown-up dinner. I thought the flavors of lemon and rosemary would fit the bill, so I threw together this marinade. 

This chicken was such a hit that even the kids ate multiple pieces. I had some hot dogs left over that night, but every single piece of chicken was gone.

Grilled Rosemary Lemon Chicken Recipe

Ingredients

  • 1/4 cup lemon juice freshly squeezed
  • 2 tablespoons avocado oil (or oll of choice)
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh rosemary chopped
  • 1 clove garlic crushed
  • 1 teaspoon sea salt
  • 2 pounds chicken drumsticks and thighs skin-on
  • additional sea salt (optional)

Instructions

  1. In a glass container big enough to hold all of the chicken pieces, whisk together the lemon juice, avocado oil, lemon zest, rosemary, garlic, and 1 teaspoon sea salt.

  2. Add the chicken pieces to the marinate, turning to coat each one. Cover and refrigerate for at least 45 minutes and up to overnight. Turn chicken pieces once or twice during this time to be sure all pieces are equally coated with marinate.

  3. Preheat grill to high with grill closed. If desired, sprinkle chicken pieces lightly with sea salt. Place chicken pieces on the grill with skin side down. Close grill and turn heat to low.

  4. Grill chicken skin-side down until brown on the skin browns, about 5-7 minutes. Turn chicken so the skin is up, close grill and continue to cook over low heat until cooked through, about 5-7 minutes, but the time can vary wildly depending on the grill and thickness of the chicken pieces.

  5. Remove from grill and allow to rest for 5 -10 minutes before serving.
