This Low-Carb Spinach and Feta Flatbread Pizza came about after I developed my nut-free pizza crust. Since this pizza crust was made from sunflower seed flour, it tastes a bit like sunflower seeds. I wanted to design a topping that would work with this flavor rather than fight with it. 

As I was contemplating flavors that go well with sunflower seeds, all that I could think about was salad. Yep, I love having a spoonful or two of sunflower seeds on my salads. It adds that delicious nuttiness and a satisfying crunch. 

Along with sunflower seeds, I also love feta cheese on my salad. It has a sharp bite like no other cheese and tastes especially good on a spinach salad. With that combination, my problem was solved and the idea for Low-Carb Spinach and Feta Flatbread Pizza was conceived!

Funny thing is that even though I thought this was be a mouth-watering combination, I was amazed at how well the final version turned out. The final recipe is even better than I had imagined. The topping of the flatbread is creamy, garlic scented goodness mixed with spinach and that salty tang of the feta. It really enhances the nutty flavor of the sunflower seed based crust.

Low-Carb Spinach and Feta Flatbread Pizza

Ingredients

  • 1 sunflower seed flatbread
  • 1 cup ricotta cheese
  • 2 tablespoons butter preferably grass-fed
  • 3 cloves garlic crushed
  • 1 tablespoon white wine vinegar
  • 3 cups fresh spinach
  • sea salt
  • black pepper freshly ground
  • 4 ounces feta cheese
  • 1/4 teaspoon red chili pepper flakes

Instructions

  1. Preheat oven to 375º Fahrenheit. Set out a cooling rack. Line a baking sheet with parchment paper and place prepared crust on top. 

  2. Spread the ricotta cheese over the flatbread going almost to the edge and set aside.

  3. Heat a large skillet over medium heat. Add butter. When butter has melted and stops bubbling add garlic. 

  4. Cook garlic for one minute. Stir in white wine vinegar. Simmer vinegar until the mixture is almost syrupy. Stir in spinach. Sprinkle with salt and pepper. Cook spinach, stirring constantly, just until it wilts--1-3 minutes. Remove from heat.

  5. Spread the prepared spinach over the ricotta cheese. Sprinkle the feta cheese crumbles and the chip pepper flakes over top. 

  6. Bake for 8-10 minutes or until heated through. If the edges of the flatbread brown too quickly, cover them with foil.

  7. Remove from oven and slide the pizza off the parchment paper and onto the cooling rack.
